Lemon and coconut lovers \u2013 this is for you!<\/p>\n<div id=\"attachment_12453\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12453\" class=\"wp-image-12453\" title=\"Lemon Macaron Cake with Coconut and Vanilla\" src=\"https:\/\/www.oogio.net\/wp-content\/uploads\/2016\/05\/lemon_coconut_and_vanilla_macaron_cake2-s.jpg\" alt=\"Lemon Macaron Cake with Coconut and Vanilla\" width=\"800\" height=\"798\" \/><p id=\"caption-attachment-12453\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 22059--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Lemon Macaron Cake with Coconut and Vanilla<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For yellow macaron shell base:<\/h4>\n<ul>\n<li>200 grams sugar powder<\/li>\n<li>130 grams almond meal<\/li>\n<li>100 grams egg whites<\/li>\n<li>Pinch of salt<\/li>\n<li>40 grams sugar<\/li>\n<li>Yellow food coloring (gel or powder)<\/li>\n<\/ul>\n<h4>For lemon cream:<\/h4>\n<ul>\n<li>3 grams gelatin powder<\/li>\n<li>15 ml. water<\/li>\n<li>1 large egg<\/li>\n<li>2 egg yolks<\/li>\n<li>70 grams sugar<\/li>\n<li>Pinch of salt<\/li>\n<li>85 ml. lemon juice<\/li>\n<li>Zest of 1 lemon<\/li>\n<li>75 grams soft butter<\/li>\n<\/ul>\n<h4>White chocolate, coconut and vanilla Chantilly cream:<\/h4>\n<ul>\n<li>100 grams white chocolate<\/li>\n<li>250 ml. heavy cream<\/li>\n<li>grains from 1\/2 vanilla bean<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tsp. coconut extract<\/li>\n<li>2 tsp. cream stabilizer of instant vanilla pudding mix<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>White chocolate discs<\/li>\n<li>Grated lemon rind<\/li>\n<li>Shredded coconut<\/li>\n<li>Little gold powder (optional)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Macarons base:<\/h4>\n<ol>\n<li>Grind icing sugar and almond meal together.<\/li>\n<li>Sift the mixture into a large bowl. It is important to sift carefully and not to leave large blocks of the mixture. If little chunks of almonds remain &#8211; do not put them into the mix.<\/li>\n<li>Put egg whites and salt in the bowl of a mixer with a whipping-hook and blend at high speed until the mixture foams and white meringue begins to form.<\/li>\n<li>Add sugar and continue beating until a glossy and thick meringue forms. Towards the end of whipping, add the food coloring.<\/li>\n<li>Add ground powders to the bowl of meringue and begin to &#8220;knock down&#8221; the mixture by folding in with a spatula. In the first moments stir slightly aggressively, and then go into a gentle fold until the mixture is uniform and stable, but not liquefied.<\/li>\n<li>Transfer the mixture to a piping bag with a round piping tip and pipe out two 24 cm diameter circles on a baking sheet or silicon mat. The circles should be more or less identical in size.<\/li>\n<li>Leave the macarons for an hour at room temperature (before baking) in order to dry a little and create a thin layer.<\/li>\n<li>Preheat oven to 150c degrees.<\/li>\n<li>Bake macarons for 18-20 minutes, until golden and risen.<\/li>\n<li>Cool completely before touching the macarons. It can be separated from the sheet once completely cooled.<\/li>\n<\/ol>\n<h4>Lemon Cream:<\/h4>\n<ol>\n<li>In a small bowl put gelatin and water and set aside for 15 minutes at room temperature, until the gelatin absorbs all the liquid.<\/li>\n<li>In a medium saucepan put egg, egg yolks, sugar, salt, lemon juice and grated zest and beat well.<\/li>\n<li>Place the pot over medium heat and cook while whisking all the time, until you get a thick cream.<\/li>\n<li>Remove from heat and add the gelatin. Beat the mixture until it melts.<\/li>\n<li>Strain and add butter. Beat the mixture until dissolved and creamy smooth.<\/li>\n<li>Transfer the cream in a closed container and refrigerate for two hours or until it is completely cold and set.<\/li>\n<li>Transfer the cream into a bowl and stir vigorously until pliable texture form.<\/li>\n<li>Transfer to a piping bag with a round 2 cm piping tip. Refrigerate.<\/li>\n<\/ol>\n<h4>White chocolate, coconut and vanilla Chantilly cream:<\/h4>\n<ol>\n<li>Chop the chocolate and put in a bowl.<\/li>\n<li>Heat a pot of cream, vanilla and salt to a simmer.<\/li>\n<li>Pour the hot cream over the chocolate, wait a minute, and beat well to a uniform and thin ganache.<\/li>\n<li>Add coconut extract and mix well.<\/li>\n<li>Cool the ganache for 3-4 hours at least until it is completely cold.<\/li>\n<li>Transfer the ganache into a bowl of a mixer with whipping attachment, add stabilizer and whip at high speed, until you get a stable cream.<\/li>\n<li>Transfer the cream into a piping bag fitted with jagged 2 cm piping tip.<\/li>\n<\/ol>\n<h4>Assemble the lemon macaron cake:<\/h4>\n<ol>\n<li>Flip one of the macarons over so that its bottom is facing upwards. Pipe mounds of Chantilly on the outline of the macaron.<\/li>\n<li>Pipe crowded mounds of lemon cream in the center.<\/li>\n<li>Close off with the top macaron base.<\/li>\n<li>Decorate with remaining creams, white chocolate discs, grated coconut and grated lemon peel.
