These chocolate and coffee sandwich cookies are not only fudgy and super rich, but also have coffee cream filling to make it extra decadent. The coffee cream adds the greatest aroma and combines perfectly with the sweetness of the chocolate cookie.<\/p>\n<div id=\"attachment_12461\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12461\" class=\"wp-image-12461\" title=\"Chocolate and Coffee Sandwich Cookies \" src=\"https:\/\/www.oogio.net\/wp-content\/uploads\/2016\/05\/chocolate_and_coffee_sandwich_cookies-s.jpg\" alt=\"Chocolate and Coffee Sandwich Cookies \" width=\"800\" height=\"795\" \/><p id=\"caption-attachment-12461\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><\/p>\n<p><script>\/\/ \n<br \/>\n     (adsbygoogle = window.adsbygoogle || []).push({});<br \/>\n\/\/ <\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Chocolate and Coffee Sandwich Cookies <\/strong><\/h4>\n<p dir=\"ltr\">12-16 small sandwich cookies<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For the cookies:<br \/>\n<\/u>100 grams dark chocolate<br \/>\n20 grams butter<br \/>\n1 large egg<br \/>\n50 grams sugar<br \/>\nPinch of salt<br \/>\n1\/2 tsp. ground instant coffee<br \/>\n20 grams cornstarch<br \/>\nA pinch of baking powder<br \/>\n100 grams dark chocolate, chopped<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>For coffee cream filling:<br \/>\n<\/u>100 grams white chocolate<br \/>\n25 ml. espresso<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><u>Decoration<\/u><u>:<br \/>\n<\/u>Melted dark chocolate<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Preheat oven to 180c degrees and line oven tray with baking paper.<\/li>\n<li>Chop the chocolate and put in a bowl. Add butter and solvent together in the microwave or over double boiler.<\/li>\n<li>In a mixer bowl whip eggs, sugar, salt and instant coffee until you get a fluffy airy cream.<\/li>\n<li>Add the melted chocolate into the mixture and fold in gently.<\/li>\n<li>Add cornstarch, baking powder and chopped chocolate and fold just until the mixture is uniform and a little sparse.<\/li>\n<li>Using 2 spoons or an ice cream scoop create small mounds (about the size of a walnut) and put on the baking paper.<\/li>\n<li>Bake for about 8-10 minutes or until the cookies set at the edges but still soft in the center.<\/li>\n<li>Cool completely and only then remove from baking paper.<\/li>\n<li>Coffee cream: chop the chocolate and put in a bowl.
