On our last trip to Italy a few months ago we ate amazing Cantuccini cookies in Florence, and since then I couldn’t wait to make my own version at home.<\/p>\n

Cantuccini are traditional Italian cookies, also known as biscotti, and are baked twice in order to get their unique texture.<\/p>\n

My take on these fabulous cookies is perfect for winter and combines three ingredients that I really like \u2013 oranges, almonds and ginger. The cookies received are golden, crispy and goes well along your coffee or tea cup.<\/p>\n

Orange, Almond and Ginger Cantuccini<\/strong><\/h4>\n

25-30 cookies<\/p>\n

Ingredients<\/u>:
\n<\/u>2 large eggs
\n150 grams light brown sugar
\n1 tsp. vanilla extract
\nPinch of salt
\n60 ml. vegetable oil
\nZest of 1 orange
\n240 grams all-purpose flour
\n1 tsp. baking powder
\n75 grams candied ginger, chopped
\n75 grams whole almonds, coarsely chopped<\/p>\n

Light brown sugar for coating<\/p>\n

Preparation<\/strong>:<\/strong><\/h4>\n
    \n
  1. In a large bowl, whisk eggs, sugar, vanilla, salt, oil and orange zest until blended.<\/li>\n
  2. Add flour, baking powder, ginger and almonds and stir just until the dough is smooth and slightly sticky.<\/li>\n
  3. Cover the dough with plastic wrap and refrigerate for about an hour.<\/li>\n
  4. Divide the dough into 2 pieces and create 2 loaves.<\/li>\n
  5. Roll each loaf in light brown sugar until coated completely.<\/li>\n
  6. Place the loaves on an oven pan lined with baking paper.<\/li>\n
  7. Preheat oven to 170c degrees.<\/li>\n
  8. Bake for 25-30 minutes or until golden.<\/li>\n
  9. Cool completely at room temperature.<\/li>\n
  10. Cut into 1-2cm thick cookies and place on a baking rack.<\/li>\n
  11. Bake for 5-10 minutes until golden and set.<\/li>\n
  12. Cool completely and store in a sealed jar.<\/li>\n<\/ol>\n

    • Keep the cookies in a sealed jar for up to two weeks.<\/li>\n
    • You can use any other type of nuts instead of almonds.<\/li>\n
    • You can use lemon peel or other citrus fruits instead of orange peel.<\/li>\n
    • Candied ginger can be achieved in organic stores and spice markets.<\/li>\n<\/ul>\n
