(1 cup) sour cream<\/li>\n<li>60 ml. (1\/4 cup) vegetable oil<\/li>\n<li>2 large eggs<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>210 grams (1.5 cups) all-purpose flour<\/li>\n<li>35 grams (1\/3 cup) almond meal<\/li>\n<li>10 grams (2 tsp.) baking powder<\/li>\n<\/ul>\n<h4>For the filling:<\/h4>\n<ul>\n<li>100-150 grams of Dulce de Leche<\/li>\n<\/ul>\n<h4>For coconut cream:<\/h4>\n<ul>\n<li>250 ml. (1 cup) heavy cream (very cold)<\/li>\n<li>20 grams (2 tbsp.) icing sugar<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>1 tsp. instant vanilla pudding powder<\/li>\n<li>1 tsp. coconut extract<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>Dulce de leche diluted with a little milk or water<\/li>\n<li>Shredded coconut<\/li>\n<li>Crunchy caramel candy<\/li>\n<li>White chocolate and coconut sheets<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 170c degrees and grease the pan.<\/li>\n<li>In a large bowl put sugar, light brown sugar, sour cream, oil, eggs, vanilla and salt and beat until blended.<\/li>\n<li>Add flour, almonds and baking powder and mix until uniform.<\/li>\n<li>Pour the mixture into the pan.<\/li>\n<li>Bake for 15-20 minutes or until golden and a toothpick inserted into the center comes out with moist crumbs.<\/li>\n<li>Cool completely.<\/li>\n<li>Using a Parisienne spoon make a small hole of the middle part of each cupcake. Generously fill the holes with Dulce de Leche.<\/li>\n<li>Coconut cream: in a mixer bowl put cream, powdered sugar, vanilla, stabilizer and coconut extract and whip at high speed until you get a stable whipped cream.<\/li>\n<li>Transfer the whipped cream into a pastry bag fitted with 2 cm round piping tip, and drizzle mounds of cream on top of each cupcake.<\/li>\n<li>Drizzle some Dulce de Leche diluted in some water, and decorate with coconut, crunchy caramel and white chocolate sheets.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cupcakes in a closed container in the refrigerator up to 5 days.<\/li>\n<li style=\"text-align: left\">It is recommended to use Dulce de Leche that is made in Argentina.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_12803\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-12803\" class=\"wp-image-12803\" title=\"Alfajores Cupcakes \" src=\"https:\/\/www.oogio.net\/wp-content\/uploads\/2016\/08\/alfajores_cupcakes2-s.jpg\" alt=\"Alfajores Cupcakes \" width=\"800\" height=\"354\" \/><p id=\"caption-attachment-12803\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>I love alfajores cookies and they are absolutely my top favorite.
