It&#8217;s festive and always makes people say &#8220;WOW&#8221; when you serve it to the table. This peanut butter macaron cake combines 3 of my favorites: peanut butter cream, sliced banana and chocolate truffles. It&#8217;s gluten free and absolutely delicious!<\/p>\n<p dir=\"ltr\"><a href=\"https:\/\/www.lilcookie.com\/category\/cookies-and-individual-desserts\/macarons\/\">More macarons recipes here &gt;&gt;<\/a><\/p>\n<div id=\"attachment_13115\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-13115\" class=\"wp-image-13115\" title=\"Peanut Butter Macaron Cake with Banana and Chocolate\" src=\"https:\/\/www.oogio.net\/wp-content\/uploads\/2016\/11\/banana_peanut_butter_and_chocolate_macaron_cake2-s.jpg\" alt=\"Peanut Butter Macaron Cake with Banana and Chocolate\" width=\"800\" height=\"699\" \/><p id=\"caption-attachment-13115\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 22683--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Peanut Butter Macaron Cake with Banana and Chocolate<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For yellow macaron shells:<\/h4>\n<ul>\n<li>76 grams egg whites<\/li>\n<li>100 grams sugar<\/li>\n<li>100 grams sugar powder<\/li>\n<li>100 grams almond meal<\/li>\n<li>A little yellow food coloring<\/li>\n<\/ul>\n<h4>For chocolate truffles:<\/h4>\n<ul>\n<li>100 grams dark chocolate<\/li>\n<li>125 ml. heavy cream<\/li>\n<\/ul>\n<h4>For peanut butter cream:<\/h4>\n<ul>\n<li>250 ml. cold whipping cream<\/li>\n<li>50 grams smooth peanut butter<\/li>\n<li>35 grams sugar powder<\/li>\n<li>15 grams cream stabilizer or instant vanilla pudding mix<\/li>\n<li>1 ripe banana (sliced)<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>Gold dust<\/li>\n<li>Cocoa powder<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Macaron shells:<\/h4>\n<ol>\n<li>In a fireproof bowl put egg whites and sugar.<\/li>\n<li>Boil a pot of water and place the bowl over the pot, but notice the water doesn&#8217;t touch the bottom of the bowl. Cook over double-boiler until sugar dissolves and mixture is smooth.<\/li>\n<li>In a food processor with a steel blade grind sugar powder and almond meal to a bery fine powder.<\/li>\n<li>When all the sugar has dissolved, transfer the egg whites mixture into a mixer bowl and whip on high speed for 7-8 minutes until you get a very stable meringue. Towards the end, add in food coloring until desired shade is achieved.<\/li>\n<li>Add almond and sugar powder into the bowl and fold gently but firmly until mixture is stable, uniform and bright, but not too runny and convenient for drizzling.<\/li>\n<li>Transfer the batter into a pastry bag with 1-2 cm round piping tip and drizzle 2 circles 16 cm in diameter on a baking tray lined with silicon mat or baking paper.<\/li>\n<li>Set aside the macaron shells for about 30 minutes before baking.<\/li>\n<li>Preheat oven to 150c degrees.<\/li>\n<li>Bake the macaron shells for 20-25 minutes or until golden and stable.<\/li>\n<li>Cool completely and extract from the pan.<\/li>\n<\/ol>\n<h4>Chocolate Truffles:<\/h4>\n<ol>\n<li>Chop the chocolate and place in a bowl.<\/li>\n<li>Heat the cream to a simmer.<\/li>\n<li>Pour the hot cream over the chocolate, wait a minute, and beat until uniform and shiny chocolate ganache is formed.<\/li>\n<li>Pour the ganache into 2.5 cm silicone mold domes and freeze for 1-2 hours or until completely set.<\/li>\n<\/ol>\n<h4>Peanut butter cream:<\/h4>\n<ol>\n<li>In a mixer bowl, whip cream, peanut butter, powdered sugar and cream stabilizer until you get a uniform and very stable cream.<\/li>\n<li>Flip on of the macaron shells on a serving plate.<\/li>\n<li>Drizzle about 1\/2 of the peanut butter cream on top and leave 1-2 cm margins. Arrange banana slices on top of the cream and top with the remaining cream.<\/li>\n<li>Arrange the truffle domes in the margins and close with the other macaron shell.<\/li>\n<li>Garnish with cocoa powder and sprinkle some gold dust on truffles and on top of the cake.<\/li>\n<li>Keep for at least 2-3 hours in the refrigerator before serving.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">This cake is at its best a day or two after preparation, but you can keep it in a closed container in the refrigerator up to 4-5 days.<\/li>\n<li style=\"text-align: left\">If you want a larger cake &#8211; double the quantities and prepare as a 24 cm diameter cake.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_13116\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-13116\" class=\"wp-image-13116\" title=\"Peanut Butter Macaron Cake with Banana and Chocolate\" src=\"https:\/\/www.oogio.net\/wp-content\/uploads\/2016\/11\/banana_peanut_butter_and_chocolate_macaron_cake3-s.jpg\" alt=\"Peanut Butter Macaron Cake with Banana and Chocolate\" width=\"800\" height=\"353\" \/><p id=\"caption-attachment-13116\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Macaron cakes have become really popular in my kitchen lately.
