It&#8217;s soft and easy to make, with coconut, dried apricots and cranberries and so simple cakes &#8211; a great treat next to a cup of coffee you simply have to try!<\/p>\n<p dir=\"ltr\"><a href=\"https:\/\/www.lilcookie.com\/category\/cakes-en\/pound-cakes\/\">Click here for more pound cake recipes &gt;&gt;<\/a><\/p>\n<div id=\"attachment_8084\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-8084\" class=\"wp-image-8084\" title=\"Coconut Cake with Dried Apricot and Cranberries\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2014\/01\/coconut_apricot_and_cranberries_cake2-small.jpg\" alt=\"Coconut Cake with Dried Apricot and Cranberries\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-8084\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 22641--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Coconut Cake with Dried Apricot and Cranberries<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>for the cake:<\/h4>\n<ul>\n<li>3 large eggs<\/li>\n<li>180 grams sugar<\/li>\n<li>1\/8 tsp. fine salt<\/li>\n<li>200 ml. sour cream<\/li>\n<li>150 grams vegetable oil<\/li>\n<li>210 grams all-purpose flour<\/li>\n<li>2 tsp. baking powder<\/li>\n<li>100 grams shredded coconut<\/li>\n<li>100 grams dried apricots (chopped)<\/li>\n<li>50 grams fried cranberries<\/li>\n<li>Icing sugar for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven 175c degrees.<\/li>\n<li>In a large bowl, whisk eggs, sugar, vanilla, salt, sour cream and oil until the mixture is smooth.<\/li>\n<li>Sift in flour and baking powder, add coconut, apricots and cranberries and mix gently, just until incorporated and the fruit mixture is evenly dispersed.<\/li>\n<li>Pour the batter into 2 greased loaf pans and bake for about 30-40 minutes, or until a toothpick inserted in the center of the cakes comes out with moist crumbs.<\/li>\n<li>Cool completely, sprinkle some powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cake in the refrigerator up to 6-7 days, but serve at room temperature.<\/li>\n<li style=\"text-align: left\">You can use any dried fruit you love.<\/li>\n<li style=\"text-align: left\">Do not like coconut?
