(1\/3 cup) vegetable oil<\/li>\n<li>1 large egg<\/li>\n<li>150 ml. (1\/2 cup + 3 tbsp.) soy milk<\/li>\n<li>100 grams (1\/2 cup) sugar<\/li>\n<li>Pinch of salt<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>25 grams (2 tbsp.) cocoa powder<\/li>\n<li>70 grams (1\/2 cup) all-purpose flour<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>50 grams dark chocolate chips<\/li>\n<\/ul>\n<h4>For chocolate ganache:<\/h4>\n<ul>\n<li>100 grams coconut cream (at least 17% fat)<\/li>\n<li>100 grams dark chocolate (chopped)<\/li>\n<\/ul>\n<h4>For the meringue:<\/h4>\n<ul>\n<li>2 large egg whites at room temperature<\/li>\n<li>Pinch of salt<\/li>\n<li>125 grams sugar<\/li>\n<li>30 ml. water<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>Sprinkles for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 170c degrees and arrange paper crowns in a muffin pan.<\/li>\n<li>In a large bowl, whisk oil, egg, soy milk, sugar, salt and vanilla until mixture is smooth.<\/li>\n<li>Sift in cocoa, flour and baking powder and beat just until assimilated in the mixture.<\/li>\n<li>Transfer the batter into the pan and fill about 2\/3 of each mold.<\/li>\n<li>Sprinkle chocolate chips over each cupcake.<\/li>\n<li>Bake for about 15-22 minutes, or until a toothpick inserted in the center of each cupcake comes out with moist crumbs.<\/li>\n<li>Cool slightly at room temperature.<\/li>\n<li>Chocolate ganache: in a small bowl put coconut cream and chopped dark chocolate and melt in the microwave or over double-boiler, until the chocolate melts and mixture is shiny and smooth.<\/li>\n<li>Dip the top of each cupcake in the ganache and cool completely in the refrigerator.<\/li>\n<li>Meringue: put egg whites and salt in the bowl of a mixer with a whipping-attachment.<\/li>\n<li>In a small saucepan cook sugar and water and bring to a boil.<\/li>\n<li>Cook over high heat and when the syrup reaches a temperature of 105c degrees begin to whip the egg whites on medium speed. If you do not have a thermometer you can tell the syrup reached the correct temperature when big bubbles in the liquid become a bit smaller.<\/li>\n<li>Continue to cook the syrup until it reaches a temperature of 115-117c degrees and remove from heat.<\/li>\n<li>Increase the whipping speed to high and pour in the syrup in a thin stream while whipping.<\/li>\n<li>Whip for about 10 minutes until you get a stable glossy meringue.
