Coconut short crust pastry topped with strawberry or raspberry jam and coconut crumbs on top &#8211; how can you go wrong?<\/p>\n<p dir=\"ltr\">These coconut jam bars are a great idea for hosting or whenever\u00a0 you want to make something delicious with the kids. The recipe is easy, quick and everyone loves it.<\/p>\n<div id=\"attachment_8409\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-8409\" class=\"wp-image-8409\" title=\"Coconut Jam Bars\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2014\/03\/jam_coconut_and_crumble_cookies2-1000.jpg\" alt=\"Coconut Jam Bars\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-8409\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19794--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Coconut Jam Bars<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>Ingredients:<\/h4>\n<ul>\n<li>210 grams (1 1\/2 cups) all-purpose flour<\/li>\n<li>20 grams (2 tbsp). grated coconut<\/li>\n<li>50 grams (1\/4 cup) sugar<\/li>\n<li>125 grams (1 stick) cold butter (cut into cubes)<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>2-3 tbsp. cold milk<\/li>\n<li>1-2 tbsp. shredded coconut for topping<\/li>\n<\/ul>\n<h4>For the filling:<\/h4>\n<ul>\n<li>200-300 grams (4-5 heaping tablespoons) strawberry or raspberry jam<\/li>\n<li>Sugar powder for serving<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 175c degrees and grease the pan.<\/li>\n<li>In a food processor with a steel blade put flour, coconut, sugar, butter, salt and vanilla and blend until crumbly.<\/li>\n<li>Add milk and continue processing just until large crumbs of dough form.<\/li>\n<li>Transfer about 2\/3 amount of dough into the pan and press down to create a base.<\/li>\n<li>Spread over the jam in a thin layer.<\/li>\n<li>Sprinkle over the remaining crumbs evenly and spread a little more coconut.<\/li>\n<li>Bake for about 25-35 minutes or until golden brown.<\/li>\n<li>Cool completely at room temperature or in the refrigerator.<\/li>\n<li>Cut into cubes and sprinkle some sugar powder.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">You can use any jam you like.<\/li>\n<li style=\"text-align: left\">Keep the jam bars in a sealed container at room temperature for up to 3-4 days.
