Three layers of chocolate meringues filled with chocolate cream and whipped cream topping. It&#8217;s gluten free, festive and perfect for the holiday.<\/p>\n<div id=\"attachment_8845\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-8845\" class=\"wp-image-8845\" title=\"Chocolate Concord Cake\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2014\/05\/concorde_cake-s.jpg\" alt=\"Chocolate Concord Cake\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-8845\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 20195--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Chocolate Concord Cake<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For chocolate meringue:<\/h4>\n<ul>\n<li>6 large egg whites<\/li>\n<li>Pinch of salt<\/li>\n<li>200 grams sugar<\/li>\n<li>40 grams cocoa powder<\/li>\n<li>150 grams sugar powder<\/li>\n<\/ul>\n<h4>For chocolate cream:<\/h4>\n<ul>\n<li>250 ml. milk<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>2 large egg yolks<\/li>\n<li>70 grams sugar<\/li>\n<li>25 grams cornstarch<\/li>\n<li>50 grams chopped dark chocolate<\/li>\n<li>125 ml. heavy cream<\/li>\n<\/ul>\n<h4>For whipped cream:<\/h4>\n<ul>\n<li>375 ml. heavy cream<\/li>\n<li>2 tbsp. sugar powder<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>75 grams chopped dark chocolate<\/li>\n<\/ul>\n<h4>For chocolate fence decoration:<\/h4>\n<ul>\n<li>75 grams dark chocolate<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>Cocoa powder<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 90c degrees and line 3 baking trays with baking papers marked with 22 cm round circle. Line another tray with baking paper for meringue sticks.<\/li>\n<li>In a mixer bowl whip egg whites and salt until pale foam begins to form.<\/li>\n<li>Add the sugar gradually and continue beating at high speed for about 10 minutes, until the meringue obtained is very stiff.<\/li>\n<li>Sift in cocoa and sugar powder and fold gently but firmly until you get a uniform and stable chocolate meringue.<\/li>\n<li>Transfer the meringue into a pastry bag with a 1-2 cm piping tip.<\/li>\n<li>Pipe 3 circles (22 cm each) and long stripes on the fourth tray.<\/li>\n<li>Bake for 3-4 hours or until everything is dry and set, and is easily separated from baking paper.<\/li>\n<li>Cool completely and store in a sealed box at room temperature until assembling the cake.<\/li>\n<li>Chocolate pastry cream: in a small saucepan put milk and vanilla and heat to a simmer.<\/li>\n<li>In a bowl, whisk egg yolks, sugar and cornstarch until smooth.<\/li>\n<li>Pour about 1\/3 of milk into the yolk mixture while whisking intensely until smooth.<\/li>\n<li>Return the cream into the pan with the remaining milk, mix well and cook over medium heat while whisking constantly until a thick pastry cream is formed.<\/li>\n<li>Remove from heat and add in the chopped chocolate.<\/li>\n<li>Beat well until melted and smooth.<\/li>\n<li>Transfer the cream into a flat container, and cover the surface with plastic wrap (in order to avoid crust formation).<\/li>\n<li>Cool the cream in the refrigerator for 2-3 hours, until it is completely cold.<\/li>\n<li>Whisk the cold cream until smooth.<\/li>\n<li>In a mixer bowl whip the heavy cream until still peaks form.<\/li>\n<li>Gently fold the whipped cream into the chocolate cream until incorporated.<\/li>\n<li>Refrigerate until assembling the cake.<\/li>\n<li>Cream: in a bowl of mixer whip cream, sugar powder and vanilla until you get a very stable whipped cream. It is important to prepare the whipped topping just before assembling the cake.<\/li>\n<li>Assemble the cake: place a meringue layer on a serving plate and pour about 1\/2 of the chocolate cream. Straighten into an even layer and sprinkle a little chopped chocolate.<\/li>\n<li>Place over the second meringue layer and pour over the remaining chocolate cream. Flatten and sprinkle with more chopped chocolate.<\/li>\n<li>Place over the last meringue layer and press lightly.<\/li>\n<li>Cool the cake in the freezer for 30 minutes.<\/li>\n<li>Cover the cake with whipped cream on the top and sides and straighten using a palate knife.<\/li>\n<li>Cool in the freezer for about 1 hour.<\/li>\n<li>Chocolate fence: prepare a cake acetate collar and place on a work surface.<\/li>\n<li>Melt the chocolate in the microwave or over double boiler.<\/li>\n<li>Pour the melted chocolate onto the collar and spread evenly in a thin plate.<\/li>\n<li>Gently place the collar around the cake and press gently. Cool in the freezer for 30 minutes.<\/li>\n<li>Decoration: break the meringue sticks and put on top of the cake.<\/li>\n<li>Sprinkle a little cocoa powder and refrigerate until serving.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the concord cake in the refrigerator up to 3-4 days.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Concorde cake is the perfect cake for Passover.
