(2 tbsp.) water<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tbsp. brandy<\/li>\n<li>100 grams dark chocolate<\/li>\n<li>250 ml. (1 cup) whipping cream (cold)<\/li>\n<\/ul>\n<h4>For serving:<\/h4>\n<ul>\n<li>milk or dark chocolate (coarsely chopped)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>In a heat-proof bowl whip egg yolks, sugar, water and salt into a smooth mixture.<\/li>\n<li>Put the bowl over a double boiler and continue whipping while heating until mixture thickens and gets fluffy. This should take about 4-5 minutes of whipping.<\/li>\n<li>Remove from the stove and add brandy.<\/li>\n<li>Chop the chocolate and melt it in a small separate bowl.<\/li>\n<li>Add the melted chocolate mixture into the egg yolks and beat until the mixture is smooth and shiny.<\/li>\n<li>Whip the cream until soft peaks form and fold into chocolate mixture gently, just until you get a smooth mixture.<\/li>\n<li>Transfer the mousse into serving glasses and cool for about 4-5 hours in the refrigerator.<\/li>\n<li>Serve with some chopped chocolate.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">It is important to use dark chocolate with at least 53% cocoa solids.<\/li>\n<li style=\"text-align: left\">Instead of brandy can use chocolate liqueur or rum.<\/li>\n<li style=\"text-align: left\">You can serve the mousse with chopped nuts, coconut or cookie crumble instead of chopped chocolate.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>I don&#8217;t know anyone who will say NO to chocolate mousse.
