This is a chocolate and cinnamon brownie cake, topped with cinnamon cream, hazelnut streusel and caramelized pears. Even thought it sounds like a lot of work &#8211; each step is easy and quick, and at the end you&#8217;ll have a pretty and so yummy cake, everyone will just love.<\/p>\n<div id=\"attachment_9448\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9448\" class=\"wp-image-9448\" title=\"Chocolate and Cinnamon Brownie Cake with Hazelnut and Pears \" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2014\/09\/cinnamon_brownie_with_pears_and_hazlenut_crumble2-s.jpg\" alt=\"Chocolate and Cinnamon Brownie Cake with Hazelnut and Pears \" width=\"800\" height=\"1213\" \/><p id=\"caption-attachment-9448\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\"><strong>Chocolate and Cinnamon Brownie Cake with Hazelnut and Pears <\/strong><\/h4>\n<p dir=\"ltr\">24 cm round cake pan<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For cinnamon brownie:<\/span><br \/>\n230 grams dark chocolate<br \/>\n150 grams butter<br \/>\n175 grams sugar<br \/>\nPinch of salt<br \/>\n1\/2 tsp. ground cinnamon<br \/>\n3 large eggs<br \/>\n100 grams all-purpose flour (see notes for gluten free version)<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For caramelized pears:<\/span><br \/>\n2 ripe pears, peeled and diced<br \/>\n50 grams sugar<br \/>\n15 grams butter<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For hazelnut crumble:<\/span><br \/>\n25 grams cold butter, cut into cubes<br \/>\n25 grams light brown sugar<br \/>\n25 grams all-purpose flour<br \/>\n20 grams chopped hazelnuts<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For cinnamon cream:<\/span><br \/>\n250 ml. heavy cream<br \/>\n1 tsp. ground cinnamon<br \/>\n2 tbsp. sugar powder<br \/>\n1 tsp. cream stabilizer of instant vanilla pudding mix<\/p>\n<h4 dir=\"ltr\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\">\n<li>Brownie: preheat oven to 175c degrees and grease the pan.<\/li>\n<li>In a medium bowl melt chocolate and butter in the microwave or over double boiler.<\/li>\n<li>Add sugar, salt and cinnamon and beat well.<\/li>\n<li>Add the eggs one at a time, while whisking between additions.<\/li>\n<li>Add the flour and mix just until incorporated.<\/li>\n<li>Pour the batter into the pan, and smooth the top.<\/li>\n<li>Bake for 15-20 minutes or until edges are set but the center is still a little soft. Cool at room temperature.<\/li>\n<li>Caramelized pears: Peel the pears and cut into large cubes.<\/li>\n<li>Heat a large skillet with sugar and form caramel.<\/li>\n<li>Add in pears and butter, reduce the heat and simmer the pears for about 5-10 minutes until softened slightly, but still solid.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Hazelnut crumble: preheat oven to 175c degrees.<\/li>\n<li>In a food processor with a steel blade put butter, sugar, flour and nuts and process until crumbly.<\/li>\n<li>Transfer the crumbs into a pan lined with baking paper and bake for 10-15 minutes or until golden.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Cinnamon cream: in a bowl of a mixer, whip cream, cinnamon, powdered sugar and stabilizer until very stable cream forms.<\/li>\n<li>Transfer the whipped cream into a piping bad fitted with a 2 cm round piping tip.<\/li>\n<li>Assemble the cake: pipe mounds of cinnamon cream over the brownie base.<\/li>\n<li>Arrange pear cubes and hazelnut crumble freely on top.<\/li>\n<li>Refrigerate until serving.<\/li>\n<\/ol>\n<h4 dir=\"ltr\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li>Keep the cake in the refrigerator for up to 3-4 days, but it&#8217;s at its best a day or two after preparation.<\/li>\n<li>If you want to receive a higher cake, prepared the brownie in a 20-22 cm round pan.<\/li>\n<li>Gluten-free version: use cornstarch instead of flour.<\/li>\n<\/ul>\n<div style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" title=\"Chocolate and Cinnamon Brownie Cake with Hazelnut and Pears \" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2014\/09\/cinnamon_brownie_with_pears_and_hazlenut_crumble-s.jpg\" alt=\"Chocolate and Cinnamon Brownie Cake with Hazelnut and Pears \" width=\"800\" height=\"365\" \/><p class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>If you&#8217;re looking for a simple, but still very beautiful and delicious cake &#8211; you just found one!
