The best birthday cake for coffee addicts!<\/p>\n<div id=\"attachment_9850\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9850\" class=\"wp-image-9850\" title=\"Coffee Layer Cake with Maple and Walnut\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2014\/10\/coffe_pecan_and_maple_cake-s.jpg\" alt=\"Coffee Layer Cake with Maple and Walnut\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-9850\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21957--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Coffee Layer Cake with Maple and Walnut<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For coffee layer cake:<\/h4>\n<ul>\n<li>4 separated eggs (at room temperature)<\/li>\n<li>Pinch of salt<\/li>\n<li>150 grams sugar<\/li>\n<li>1 tsp. granulated instant coffee<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>140 grams all-purpose flour<\/li>\n<li>5 grams baking powder<\/li>\n<\/ul>\n<h4>For coffee syrup:<\/h4>\n<ul>\n<li>180 ml. water<\/li>\n<li>150 grams sugar<\/li>\n<li>1 tsp. granulated instant coffee<\/li>\n<li>1 tbsp. coffee liqueur or brandy<\/li>\n<\/ul>\n<h4>For maple and cinnamon cream:<\/h4>\n<ul>\n<li>375 ml. heavy cream<\/li>\n<li>2 tbsp. maple syrup<\/li>\n<li>1\/2 tsp. ground cinnamon<\/li>\n<li>1 tsp. cream stabilizer or instant vanilla pudding mix<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>Finely chopped toasted almonds<\/li>\n<li>Pecans<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Coffee cake: preheat oven to 170c degrees and grease the pan.<\/li>\n<li>In a bowl of a mixer whip egg whites and salt until pale foam begins to form.<\/li>\n<li>Add the sugar gradually and continue beating at high speed until stiff peaks form.<\/li>\n<li>Meanwhile, whisk egg yolks, instant coffee and vanilla until blended.<\/li>\n<li>Reduce the mixer speed and add in the egg yolk mixture, while whipping on medium speed. Blend until smooth.<\/li>\n<li>Sift in flour and baking powder and fold gently just until the mixture is blended.<\/li>\n<li>Pour the batter into the pan, and smooth the top.<\/li>\n<li>Bake for 25-30 minutes or until golden brown and a skewer inserted in the center of the cake comes out clean.<\/li>\n<li>Cool the cake completely at room temperature.<\/li>\n<li>Coffee syrup: in a small boil water, sugar and coffee.<\/li>\n<li>Cook for 2-3 minutes after boiling and remove from heat.<\/li>\n<li>Cool 5 minutes at room temperature and add liqueur.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Maple and cinnamon cream: in a bowl of a mixer whip cream, maple syrup, cinnamon and stabilizer until stable and creamy.<\/li>\n<li>Cut the cake into 3 equal layers with a long serrated knife.<\/li>\n<li>Brush the bottom layer with syrup generously and cover with a thin layer of maple cream (about 1\/4 amount of the cream).<\/li>\n<li>Place on another layer of cake, brush with syrup and spread more cream (anpther 1\/4).<\/li>\n<li>Top with the third layer of the cake and brush generously with syrup.<\/li>\n<li>Cover the cake with cream on the sides and top and flatten it using a palate knife.<\/li>\n<li>Decorate the top with pecans and chopped almonds on the sides.<\/li>\n<li>Refrigerate until serving.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cake in the refrigerator up to 3-4 days in a closed container.<\/li>\n<li style=\"text-align: left\">It is important to brush the cake layers generously with syrup.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_9851\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-9851\" class=\"wp-image-9851\" title=\"Coffee Layer Cake with Maple and Walnut\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2014\/10\/coffe_pecan_and_maple_cake2-s.jpg\" alt=\"Coffee Layer Cake with Maple and Walnut\" width=\"800\" height=\"530\" \/><p id=\"caption-attachment-9851\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>This coffee layer cake is perfect for coffee lovers &#8211; 3 layers of coffee cake soaked with coffee syrup and filled with maple and cinnamon cream.
