These chocolate eclairs are so delicious, festive and colorful, and the kids will LOVE them.<\/p>\n<div id=\"attachment_10022\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10022\" class=\"wp-image-10022\" title=\"Chocolate Eclairs with Sprinkles\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2014\/11\/sprinkles_eclairs-s.jpg\" alt=\"Chocolate Eclairs with Sprinkles\" width=\"800\" height=\"529\" \/><p id=\"caption-attachment-10022\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\"><strong>Chocolate Eclairs with Sprinkles<\/strong><\/h4>\n<p dir=\"ltr\">20-25 small chocolate eclairs<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For choux pastry:<\/span><br \/>\n250 ml. milk<br \/>\nPinch of salt<br \/>\n60 grams sugar<br \/>\n100 grams butter<br \/>\n140 grams all-purpose flour<br \/>\n3-4 beaten eggs<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For dark chocolate cream:<\/span><br \/>\n1 gram gelatin powder<br \/>\n5 ml. water<br \/>\n250 ml. heavy cream<br \/>\n200 ml. milk<br \/>\nPinch of salt<br \/>\n50 grams sugar<br \/>\n4 large egg yolks<br \/>\n250 grams chopped dark chocolate<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For the glaze:<\/span><br \/>\nNatural Fondant glaze<br \/>\nSprinkles<\/p>\n<h4 dir=\"ltr\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<ol dir=\"ltr\">\n<li>Choux pastry: in a small pot put milk, salt, sugar and butter and bring to a strong boil over high heat.<\/li>\n<li>Once the mixture boils, remove from heat and add in the flour all at once.<\/li>\n<li>With a wooden spoon, stir the mixture until smooth dough is formed and separated from the sides of the pot.<\/li>\n<li>Transfer the dough into the bowl of a mixer with a paddle-attachment and blend for 2-3 minutes, until slightly cooled.<\/li>\n<li>Add the eggs gradually while beating until dough is elastic and smooth. Check the readiness of dough by creating a &#8220;trail&#8221; with a wooden spoon in the center of the dough &#8211; if the track remains stable, add some eggs, and if it closes a bit &#8211; the dough is ready. It is important not to add too many eggs to the dough or it may become too soft and ruined.<\/li>\n<li>Transfer the dough into a pastry bag with a large serrated piping tip and drizzle 20-25 eclairs on a baking tray lined with baking paper.<\/li>\n<li>Preheat oven 190c degrees.<\/li>\n<li>Bake for 15-17 minutes. It is very important not to open the oven door during this time.<\/li>\n<li>After about 15 minutes, open the door slightly by sticking a wooden spoon handle in it, and bake for another 7-10 minutes, or until evenly golden.<\/li>\n<li>Cool completely at room temperature before filling and decoration.<\/li>\n<li>Dark chocolate cream: in a small bowl mix gelatin and water and set aside for 10-15 minutes at room temperature, until the gelatin absorbs the liquid.<\/li>\n<li>In a medium saucepan put cream, milk and salt and heat to simmering point.<\/li>\n<li>In a small bowl, whisk egg yolks and sugar until smooth.<\/li>\n<li>Pour about 1\/3 of the hot cream mixture over the yolks, while whisking.<\/li>\n<li>Add the yolk mixture into the pan with the remaining cream and stir with a sweet tooth.<\/li>\n<li>Cook over medium heat, stirring constantly, until the mixture reaches 82-84c degrees.<\/li>\n<li>Dissolve the gelatin in the microwave and add into the cream.<\/li>\n<li>Strain and add in chopped chocolate. Wait a minute, and beat until creamy and smooth.<\/li>\n<li>Cool the cream in sealed box in the refrigerator for 4-5 hours at least.<\/li>\n<li>Make 2 small holes at the bottom of each eclair.<\/li>\n<li>Transfer the cream into a pastry bag with a small round piping tip and fill the eclairs.<\/li>\n<li>Coatings: heat the fondant in a small saucepan until it reaches 40-45c degrees.<\/li>\n<li>Dip the top of each \u00e9clair in fondant and shake off excess coating.
