They are filled with vanilla coconut cream, strawberries and topped with chocolate<\/p>\n<div id=\"attachment_14002\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-14002\" class=\"wp-image-14002\" title=\"Dairy Free Eclairs Filled with Vanilla Coconut Cream, Strawberries and Chocolate\" src=\"http:\/\/OOGIO.NET\/wp-content\/uploads\/2016\/12\/2.jpg\" alt=\"Dairy Free Eclairs Filled with Vanilla Coconut Cream, Strawberries and Chocolate\" width=\"800\" height=\"533\" \/><p id=\"caption-attachment-14002\" class=\"wp-caption-text\">Photo: Benny Gam Zo Letova<\/p><\/div>\n<p dir=\"ltr\" style=\"text-align: justify;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Dairy Free Eclairs Filled with Vanilla Coconut Cream, Strawberries and Chocolate<\/strong><\/h4>\n<p dir=\"ltr\" style=\"text-align: justify;\">10 medium eclairs<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">For choux pastry:<\/span><br \/>\n125 ml. water<br \/>\nPinch of salt<br \/>\n30 grams sugar<br \/>\n50 ml. vegetable oil<br \/>\n70 grams all-purpose flour<br \/>\n2 beaten eggs<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">For vanilla coconut cream:<\/span><br \/>\n250 grams coconut cream (at least 17% fat)<br \/>\n70 grams sugar<br \/>\n2 large egg yolks<br \/>\n1 tsp. vanilla paste (or vanilla extract)<br \/>\n25 grams corn starch<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><span style=\"text-decoration: underline;\">For chocolate decoration:<\/span><br \/>\n100 grams melted dark chocolate<br \/>\n1\/2 tsp. vegetable oil<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">10-12 sliced strawberries<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation<\/strong><strong>:<\/strong><\/h4>\n<h5 dir=\"ltr\">Make the eclairs:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>preheat oven to 190c degrees.<\/li>\n<li>Choux pastry: in a medium saucepan put water, salt, sugar and oil and heat to a strong boil.<\/li>\n<li>Add flour and stir while cooking, until it turns into a lump of dough.<\/li>\n<li>Transfer the dough to the bowl of an electric mixer with a paddle attachment and mix on medium speed for 2-3 minutes until it cools down a little.<\/li>\n<li>Add the eggs gradually while beating until dough is elastic and smooth. Check the readiness of dough by creating a &#8220;trail&#8221; with a wooden spoon in the center of the dough &#8211; if the track remains stable, add some eggs, and if it closes a bit &#8211; the dough is ready. It is important not to add too many eggs to the dough or it may become too soft and ruined.<\/li>\n<li>Transfer the dough to a pastry bag fitted with a serrated 2 cm piping tip.<\/li>\n<li>On a baking tray lined with baking paper, pipe about 10 medium eclairs. It&#8217;s important to leave some space between the eclairs.<\/li>\n<li>Baking: bake for 12-15 minutes at first. Than reduce oven temperature to 180c degrees and continue to bake for 7-10 minutes, or until golden brown.<\/li>\n<li>Cool completely before filling.<\/li>\n<li>Once cooled, cut the eclairs lengthwise before filling.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Coconut and vanilla cream:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>In a small pan put coconut cream and vanilla and bring to a simmer.<\/li>\n<li>In a separate bowl whisk egg yolks, sugar and cornstarch.<\/li>\n<li>Pour about 1\/3 of cream mixture into the egg yolks while whisking well until incorporated. Then add the remaining cream and continue to mix until blended.<\/li>\n<li>Return the cream to the pan and cook over medium heat while whisking until a thick pastry cream<\/li>\n<li>Remove from the heat and transfer into a flat container. Cover the surface with plastic wrap and chill for 2-3 hours until completely cold.<\/li>\n<li>Transfer the cream into a bowl and whisk, until it returns to its original texture.<\/li>\n<li>Transfer the cream into a piping bag and fill the eclairs. Add sliced strawberries and close the top.<\/li>\n<\/ol>\n<h5 dir=\"ltr\">Decorate:<\/h5>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>mix melted chocolate and oil in a small bowl and transfer into a small piping bag.<\/li>\n<li>Drizzle small strips of melted dark chocolate on top of each \u00e9clair and serve.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\">\n<li style=\"text-align: justify;\">Keep the eclairs in a closed container in the refrigerator up to 3-4 days.
