I love using peanut butter in my recipes because it adds a little saltiness that always works perfectly in desserts. These peanut butter cookies combine smooth peanut butter and cornmeal and are easy to make, gluten free and nondairy. The cornmeal adds a special texture and makes these cookies even more addictive than traditional <a href=\"https:\/\/www.lilcookie.com\/peanut-butter-and-jelly-sandwich-cookies\/\">peanut butter cookies<\/a>.<\/p>\n<p dir=\"ltr\">I made these peanut butter cookies with my nephews a few times, and even though I wasn&#8217;t sure if they like the cornmeal texture &#8211; they absolutely loved it and keep asking me to make these cookies over and over whenever I see them.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-10530\" title=\"Cornmeal Peanut Butter Cookies\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/02\/peanut_butter_and_cornmeal_cookies5-s.jpg\" alt=\"Cornmeal Peanut Butter Cookies\" width=\"800\" height=\"534\" \/><br \/>\n<script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19693--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Cornmeal Peanut Butter Cookies<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p>Based on a recipe from the blog <a href=\"https:\/\/www.pastryaffair.com\/blog\/2012\/5\/2\/peanut-butter-cornmeal-cookies.html\" target=\"_blank\" rel=\"noopener\">Pastry Affair<\/a> with little adjustments.<\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the cookies:<\/h4>\n<ul>\n<li>240 grams (1 cup) smooth peanut butter<\/li>\n<li>100 grams (1\/2 cup) sugar<\/li>\n<li>1 large egg<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>60 grams (1\/3 cup) cornmeal<\/li>\n<li>Sugar powder for serving<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven 175c degrees.<\/li>\n<li>In a large bowl mix together peanut butter, sugar, egg, vanilla, baking powder and cornmeal until smooth dough forms.<\/li>\n<li>Form small balls of dough and place on an oven tray lined with baking paper.<\/li>\n<li>Slightly flatten the top of the cookies using a fork.<\/li>\n<li>Bake for about 10-12 minutes or until golden and set on the edges, but still slightly soft in the center.<\/li>\n<li>Cool completely, sprinkle with powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cookies in a sealed jar up the week.<\/li>\n<li style=\"text-align: left\">You can use brown sugar instead of sugar.<\/li>\n<li style=\"text-align: left\">I used a smooth peanut butter, but you can use crunchy peanut butter.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_10531\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10531\" class=\"wp-image-10531\" title=\"Cornmeal Peanut Butter Cookies\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/02\/peanut_butter_and_cornmeal_cookies3-s.jpg\" alt=\"Cornmeal Peanut Butter Cookies\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-10531\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Peanut butter is one of my all-time favorites in desserts and sweets.
