(2 tbsp.) maple syrup<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>pinch of salt<\/li>\n<li>180 ml. (3\/4 cup) water<\/li>\n<li>120 ml. (1\/2 cup) vegetable oil<\/li>\n<li>210 grams (1 1\/2 cups) all-purpose flour<\/li>\n<li>10 grams (2 tsp.) baking powder<\/li>\n<li>100 grams (1 cup) shredded coconut<\/li>\n<li>25 grams (1\/4 cup) quick oats<\/li>\n<li>400 grams sour cherries (strained)<\/li>\n<li>Icing sugar for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 170c degrees and grease the pans.<\/li>\n<li>In a large bowl, whisk eggs, sugar, maple, vanilla, salt, water and oil until the mixture is smooth and thin.<\/li>\n<li>Add flour, baking powder, shredded coconut and quick oats and mix just until incorporated.<\/li>\n<li>Add the cherries and mix gently just until evenly dispersed.<\/li>\n<li>Pour the mixture into the pans, and smooth the top.<\/li>\n<li>Bake for about 30-40 minutes or until a toothpick inserted in the center of the cakes comes out with moist crumbs.<\/li>\n<li>Cool completely, sprinkle with powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cakes in a closed container in the refrigerator up to 3-4 days, but it is recommended to serve at room temperature.<\/li>\n<li style=\"text-align: left\">You can use fresh cherries instead of sour cherries.<\/li>\n<li style=\"text-align: left\">You can use almond meal instead of shredded coconut.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_10733\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10733\" class=\"wp-image-10733\" title=\"Coconut Cake with Maple and Sour Cherries\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/04\/coconut_maple_and_sour_cherry_cake-s.jpg\" alt=\"Coconut Cake with Maple and Sour Cherries\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-10733\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Easy to make, so good and a great treat next to your coffee cup &#8211; coconut cake with maple and sour cherries that is simply irresistible.
