Be\u00a0ready for some compliments!<\/p>\n<div id=\"attachment_10795\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10795\" class=\"wp-image-10795\" title=\"Coffee and Hazelnuts Chocolate Fudge Cake\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/04\/chocolate_and_hazelnut_cake2-s.jpg\" alt=\"Coffee and Hazelnuts Chocolate Fudge Cake\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-10795\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 19864--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Coffee and Hazelnuts Chocolate Fudge Cake<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For coffee chocolate fudge cake:<\/h4>\n<ul>\n<li>200 grams dark chocolate<\/li>\n<li>150 grams butter<\/li>\n<li>30 ml. expresso<\/li>\n<li>150 grams sugar<\/li>\n<li>Pinch of salt<\/li>\n<li>1\/2 tsp. instant coffee powder<\/li>\n<li>3 large eggs<\/li>\n<li>75 grams cornstarch<\/li>\n<li>1\/2 tsp. baking powder<\/li>\n<\/ul>\n<h4>For milk chocolate mousse domes:<\/h4>\n<ul>\n<li>1 gram gelatin powder<\/li>\n<li>5 ml. water<\/li>\n<li>150 grams milk chocolate<\/li>\n<li>85 ml. milk<\/li>\n<li>Pinch of salt<\/li>\n<li>1 large egg yolk<\/li>\n<li>200 ml. whipping cream (very cold)<\/li>\n<\/ul>\n<h4>For crunchy hazelnuts:<\/h4>\n<ul>\n<li>50 grams Nutella spread<\/li>\n<li>25 grams dark chocolate<\/li>\n<li>15 grams butter<\/li>\n<li>20 grams hazelnuts (coarsely chopped)<\/li>\n<\/ul>\n<h4>For coffee and praline cream:<\/h4>\n<ul>\n<li>250 ml. whipping cream (very cold)<\/li>\n<li>1 tbsp. sugar powder<\/li>\n<li>1 tbsp. praline paste<\/li>\n<li>1 tsp. instant coffee powder<\/li>\n<li>1 tsp. instant vanilla pudding powder<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>roasted hazelnuts (Halved)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 170 degrees and grease the pan.<\/li>\n<li>Chop the chocolate and put in a bowl. Add butter and melt together in the microwave or over double-boiler until melted and smooth.<\/li>\n<li>Add espresso, sugar, salt and instant coffee and beat until smooth.<\/li>\n<li>Add the eggs one at a time, while whisking between additions.<\/li>\n<li>Add cornstarch and baking powder and mix just until incorporated.<\/li>\n<li>Pour the mixture into the pan, and smooth the top.<\/li>\n<li>Bake for 20-25 minutes or until set at the edges but still slightly soft in the center.<\/li>\n<li>Cool completely before assembly and decoration. The cake does not rise very high and that&#8217;s fine.<\/li>\n<li>Milk chocolate mousse domes: in a small bowl mix gelatin and water and set aside for about 5 minutes at room temperature, until the gelatin absorbs the liquid.<\/li>\n<li>Chop the chocolate and put in a medium bowl. Melt it over double-boiler or in the microwave and set aside.<\/li>\n<li>In a small saucepan heat milk and salt to simmering point. Meanwhile, in a small separate bowl, beat the yolk until smooth.<\/li>\n<li>Add about 1\/3 of hot milk mixture into the yolk while intense whisking. Transfer the yolk mixture into the pot along with remaining milk and mix well.<\/li>\n<li>Cook the mixture over medium-low heat, stirring with a spatula, until the mixture thickens slightly and reaches a temperature of 82-84 degrees.<\/li>\n<li>Remove from heat, melt the gelatin and add in.<\/li>\n<li>Strain the mixture and add in the melted chocolate. Beat well until mixture is smooth and chocolatey. Cool for about 10 minutes at room temperature.<\/li>\n<li>Whip the cream to soft peaks and gently fold into the chocolate mixture until a smooth mousse is formed.<\/li>\n<li>Pour the mousse into a silicon mold shaped like 6-7 cm domes and level the top. Freeze for 3-4 hours until completely frozen.<\/li>\n<li>Crunchy hazelnuts: in a small bowl put Nutella spread, chocolate and butter and melt in the microwave until everything is melted and mixture is smooth.<\/li>\n<li>Add the nuts and stir.<\/li>\n<li>Transfer the mixture onto a tray lined with baking paper and spread to about 1-2 cm thick. Freeze until completely set.<\/li>\n<li>With a sharp knife, cut the crunch into small squares and store in the freezer until the assembly of the cake.<\/li>\n<li>Coffee and praline cream: in a bowl of a mixer whip cream, powdered sugar, praline paste, instant coffee and stabilizer until firm.<\/li>\n<li>Transfer the whipped cream into a piping bag with a serrated piping tip.<\/li>\n<li>Assemble the cake: extract the mousse domes from the mold and place on top of the cake freely.<\/li>\n<li>Between domes, pipe mounds of coffee and praline cream.<\/li>\n<li>Garnish with crunchy nut squares and hazelnuts.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cake in a closed container in the refrigerator up to 3-4 days.<\/li>\n<li style=\"text-align: left\">You can use any type of nuts you like instead of hazelnuts.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_10796\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10796\" class=\"wp-image-10796\" title=\"Coffee and Hazelnuts Chocolate Fudge Cake\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/04\/chocolate_and_hazelnut_cake-a.jpg\" alt=\"Coffee and Hazelnuts Chocolate Fudge Cake\" width=\"800\" height=\"530\" \/><p id=\"caption-attachment-10796\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Chocolate cake is definitely the most popular cake in the world, and no wonder &#8211; who can say no to a large (or a small) piece of luscious chocolate cake?
