These raspberry chocolate tarts has chocolate short crust pastry filled with chocolate cream and raspberries, and are such a great dessert. The raspberry melts and moisten the chocolate cream, and together you get a beautiful sweet and sour treat.<\/p>\n<div id=\"attachment_10822\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10822\" class=\"wp-image-10822\" title=\"Raspberry Chocolate Tarts\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/05\/chocolate_and_berry_tartlettes2-s.jpg\" alt=\"Raspberry Chocolate Tarts\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-10822\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21178--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Raspberry Chocolate Tarts<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For cocoa crust:<\/h4>\n<ul>\n<li>180 grams flour<\/li>\n<li>30 grams cocoa powder<\/li>\n<li>40 grams sugar powder<\/li>\n<li>100 grams cold butter cut into cubes<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>1 large egg<\/li>\n<li>1-2 tbsp. cold water (if necessary)<\/li>\n<\/ul>\n<h4>For chocolate and raspberry filling:<\/h4>\n<ul>\n<li>250 grams dark chocolate 60% cocoa solids<\/li>\n<li>150 grams butter<\/li>\n<li>2 large eggs<\/li>\n<li>1 egg yolk<\/li>\n<li>30 grams sugar<\/li>\n<li>Pinch of salt<\/li>\n<li>100-150 grams frozen or fresh raspberries<\/li>\n<li>Icing sugar for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Chocolate tart shells: in a food processor with a steel blade blend flour, cocoa powder, sugar, butter, vanilla and salt until mixture is crumbly.<\/li>\n<li>Add egg and continue to blend just until large chunks of dough form. If the dough is not united, you can gradually add 1-2 tablespoons cold water.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and create a disc-shape.<\/li>\n<li>Wrap in plastic wrap and refrigerate for about 1 hour.<\/li>\n<li>On a floured work surface roll out the dough about 3 mm thick and cut out 10-12 cm round circles. Line the molds while ensuring the creation of a right angle between the base and the edges.<\/li>\n<li>Pierce the base of the crust with a fork.<\/li>\n<li>Cool in the freezer for about 1\/2 hour.<\/li>\n<li>Preheat oven to 180c degrees.<\/li>\n<li>Blind baking: put a sheet of heat-resistant plastic wrap or baking paper over each tartelette and fill with dry beans or special weights for baking.<\/li>\n<li>Bake for about 10-12 minutes.<\/li>\n<li>Remove the weights and the plastic wrap and continue to bake the crust for about 5-6 minutes or until set and almost fully baked.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Chocolate and raspberry filling: chop the chocolate and put in a bowl. Add butter and melt in microwave or over double-boiler.<\/li>\n<li>In a mixer bowl whip eggs, egg yolk, sugar and salt at high speed for 4-5 minutes or until you get an airy bright cream.<\/li>\n<li>Add the whipped eggs into the melted chocolate mixture and fold gently until mixture is smooth.<\/li>\n<li>Pour the mixture into the baked crust filling almost to the rim.<\/li>\n<li>Put 2-3 raspberries in each tartelette.<\/li>\n<li>Reduce the oven temperature to 160 degrees.<\/li>\n<li>Bake for 10-15 minutes or until the filling is set, but still slightly soft in the center.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<li>Sprinkle with powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the raspberry chocolate tarts in a sealed container in the refrigerator for up to 3-4 days, but serve at room temperature.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_10823\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10823\" class=\"wp-image-10823\" title=\"Raspberry Chocolate Tarts\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/05\/chocolate_and_berry_tartlettes-s.jpg\" alt=\"Raspberry Chocolate Tarts\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-10823\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Chocolate tart is one of the cakes I like making the most.
