The following cappuccino cheesecake is flavored with coffee and becomes such a great treat for Shavuot or for people who like their cheesecakes less cheesy in taste.<\/p>\n<div id=\"attachment_10842\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10842\" class=\"wp-image-10842\" title=\"Cappuccino Cheesecake\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/05\/tiramisu_cheesecake-s.jpg\" alt=\"Cappuccino Cheesecake\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-10842\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21036--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Cappuccino Cheesecake<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For the crust:<\/h4>\n<ul>\n<li>100 grams plain biscuits or graham cracker<\/li>\n<li>50 grams melted butter<\/li>\n<li>Pinch of salt<\/li>\n<li>1\/2 tsp. instant coffee powder<\/li>\n<\/ul>\n<h4>For cheese and coffee filling:<\/h4>\n<ul>\n<li>250 grams ricotta cheese<\/li>\n<li>225 grams cream cheese<\/li>\n<li>100 grams sugar<\/li>\n<li>1\/2 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>1 tsp. instant ground coffee<\/li>\n<li>2 tbsp. boiling water<\/li>\n<li>2 large eggs<\/li>\n<li>1 large egg yolks<\/li>\n<li>15 grams cornstarch<\/li>\n<\/ul>\n<h4>For mascarpone cream:<\/h4>\n<ul>\n<li>125 ml. heavy cream<\/li>\n<li>125 grams mascarpone<\/li>\n<li>1 tbsp. sugar powder<\/li>\n<li>1 tbsp. cream stabilizer or instant vanilla pudding mix<\/li>\n<li>Cocoa powder for serving<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Crust: in a food processor grind biscuits to a fine powder. Add butter, salt and instant coffee and stir well until absorbed.<\/li>\n<li>Transfer the crumbs into the pans and press evenly to the bottom to create a thin base.<\/li>\n<li>Freeze for about 1\/2 hour.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>Bake for 6-8 minutes, until golden. Cool.<\/li>\n<li>Coffee and cheese filling: in a large bowl, whisk ricotta cheese, cream cheese, sugar, vanilla and salt until mixture is smooth.<\/li>\n<li>In a small bowl mix instant coffee and boiling water and add to the mixture into the cheese batter white whisking.<\/li>\n<li>Add in the eggs and yolk one by one while whisking between additions.<\/li>\n<li>Add cornstarch and whisk until blended.<\/li>\n<li>Pour the filling onto the baked crusts and fill up to 3\/4 height.<\/li>\n<li>Reduce the oven temperature to 150c degrees and bake for 20-25 minutes, or until the filling is set at the edges, but still slightly soft in the center.<\/li>\n<li>Cool completely before icing and decoration.<\/li>\n<li>Mascarpone cream: in a bowl of a mixer, whip cream, mascarpone, sugar powder and stabilizer until you get a very stable whipped cream.<\/li>\n<li>Transfer the cream into a piping bag fitted with jagged piping tip and drizzle mounds of cream on top of the cakes.<\/li>\n<li>Sprinkle with a little cocoa powder and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the cakes in a sealed container in the refrigerator up to 5-6 days.<\/li>\n<li style=\"text-align: left\">Gluten-free version: use gluten-free biscuits instead of plain biscuits.<\/li>\n<li style=\"text-align: left\">You can make the recipe in one 20 cm round cake pan.
