Eclair are one of my favorite desserts &#8211; I love the combination of a crunchy golden pastry filled with cream, and it makes such a great dessert you can make different each and every time.<\/p>\n<p dir=\"ltr\">These cherry eclairs are filled with mascarpone cream and cherries, and has a crunchy pistachio crumble layer on top. It&#8217;s festive and perfect for hosting a fancy dinner or brunch, and I&#8217;m sure you&#8217;ll like it too!<\/p>\n<h4 dir=\"ltr\"><strong>Cherry Eclairs with Mascarpone Cream and Pistachios<\/strong><\/h4>\n<p dir=\"ltr\">10 medium eclairs<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For pistachio crumble:<\/span><br \/>\n100 grams cold butter<br \/>\n100 grams sugar<br \/>\n80 grams flour<br \/>\n20 grams pistachios<br \/>\nA pinch of salt<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For p\u00e2te \u00e0 choux:<\/span><br \/>\n125 ml. milk<br \/>\nA pinch of salt<br \/>\n30 grams sugar<br \/>\n50 grams butter<br \/>\n70 grams flour<br \/>\n2 eggs, whisked<\/p>\n<p dir=\"ltr\"><span style=\"text-decoration: underline;\">For mascarpone cream:<\/span><br \/>\n225 grams mascarpone cheese<br \/>\n250 ml. whipping cream<br \/>\n2 tbsp. sugar powder<br \/>\n1 tsp. vanilla extract<br \/>\n1 tsp. whipped cream stabilizer<\/p>\n<p dir=\"ltr\">150-200 grams fresh cherries<br \/>\n20-30 grams toasted, chopped pistachios<\/p>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Preparation:<\/strong><\/h4>\n<ol dir=\"ltr\" style=\"text-align: justify;\">\n<li>Pistachio crumble: put butter, sugar, flour, pistachios and salt in a food processor, and blend together until a dough forms.<\/li>\n<li>Flatten the dough and cool for about an hour.<\/li>\n<li>Using a rolling pin, roll the dough until about 2-3 mm. thick.<\/li>\n<li>With a sharp knife cut 2*8 cm rectangles and keep in freezer until use.<\/li>\n<li>Preheat oven to 190c degrees.<\/li>\n<li>P\u00e2te \u00e0 choux: in a medium pan put milk, salt, sugar and butter and bring to a boil on high heat. Make sure all butter is melted.<\/li>\n<li>Remove from stove and add flour. Stir together until a form dough forms.<\/li>\n<li>Put dough in your electric mixer bowl with a paddle attachment and whisk for about 2-3 minutes.<\/li>\n<li>Add about half of the egg mixture and keep blending on medium speed. The dough will appear broken, but after a few more seconds it will be ok.<\/li>\n<li>Gradually add the rest of the eggs until mixture is soft and smooth.<\/li>\n<li>Transfer the batter into a piping bag fitted with large 2 cm serrated piping tip.<\/li>\n<li>Drizzle 10 eclairs at intervals each about 8-9 cm long on a baking pan lined with baking paper.<\/li>\n<li>Place a pistachio crumble rectangle on top of each \u00e9clair.<\/li>\n<li>Bake for about 15 minutes in 190c degrees. Than decrease the heat to 180c degrees and continue baking for about 10-15 minutes until golden brown and completely set.<\/li>\n<li>Allow cooking at room temperature.<\/li>\n<li>Cut each \u00e9clair into 2 parts.<\/li>\n<li>Mascarpone cream: in a mixer bowl whip mascarpone, cream, sugar powder, vanilla extract and cream stabilizer until firm and creamy.<\/li>\n<li>Transfers the cream into a piping bag fitted with 1-2 cm serrated tip, and fill the eclairs generously.<\/li>\n<li>Arrange some fresh cherry halves and &#8220;sandwich&#8221; with the other part of each \u00e9clair.<\/li>\n<li>Drizzle some mascarpone cream on top, and serve with whole cherries and chopped pistachios.<\/li>\n<\/ol>\n<h4 dir=\"ltr\" style=\"text-align: justify;\"><strong>Notes:<\/strong><\/h4>\n<ul dir=\"ltr\" style=\"text-align: justify;\">\n<li>Eclairs are at its best on the day of preparation.<\/li>\n<li>You can use raspberries of strawberries instead of cherries.<\/li>\n<\/ul>\n<div id=\"attachment_10950\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-10950\" class=\"wp-image-10950\" title=\"Cherry Eclairs with Mascarpone Cream and Pistachios\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/05\/eclairs-s.jpg\" alt=\"Cherry Eclairs with Mascarpone Cream and Pistachios\" width=\"800\" height=\"534\" \/><p id=\"caption-attachment-10950\" class=\"wp-caption-text\">Photo: Benny Gam Zo Letova<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Whenever I want to impress with a beautiful dessert &#8211; I make eclairs.
