These almond muffins are soft, fragrant and delicious. They&#8217;re easy to make and also combine coffee and coconut for added texture and aroma.<\/p>\n<p><!--WPRM Recipe 20381--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Coffee, Coconut and Almond Muffins<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>Ingredients:<\/h4>\n<ul>\n<li>100 grams (1 stick) soft butter<\/li>\n<li>100 grams (1\/2 cup) light brown sugar<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>pinch of salt<\/li>\n<li>2 large eggs<\/li>\n<li>150 ml. (2\/3 cup) coconut milk<\/li>\n<li>60 ml. (1\/4 cup) freshly roasted expresso<\/li>\n<li>140 grams (1 cup) all-purpose flour<\/li>\n<li>50 grams (1\/2 cup) shredded coconut<\/li>\n<li>1\/2 tsp. baking powder<\/li>\n<li>50 grams (1\/2 cup) almonds (coarsely chopped)<\/li>\n<li>Icing sugar for decoration<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 170c degrees and grease the pan.<\/li>\n<li>In a bowl of an electric mixer with a paddle attachment, mix butter, sugar, vanilla and salt until mixture is creamy and smooth.<\/li>\n<li>Add the eggs one-by-one, while mixing between each addition, until mixture is smooth.<\/li>\n<li>Add coconut milk and espresso and mix on low speed.<\/li>\n<li>Add flour, coconut and baking powder and mix just until incorporated.<\/li>\n<li>Fill the pan with the batter.<\/li>\n<li>Sprinkle over the muffin tops some chopped almonds.<\/li>\n<li>Bake for about 15-25 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out with moist crumbs.<\/li>\n<li>Cool completely, sprinkle with powdered sugar and serve.<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<ul>\n<li style=\"text-align: left\">Keep the almond muffins in a closed container in the refrigerator up to 4-5 days, but you should serve at room temperature.<\/li>\n<li style=\"text-align: left\">Instead of almonds you can use any other nut you like.<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-meta\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--><\/p>\n<div id=\"attachment_11092\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-11092\" class=\"wp-image-11092\" title=\"Coffee, Coconut and Almond Muffins\" src=\"https:\/\/www.oogio.net\/wp-content\/uploads\/2015\/07\/coffee_coconut_and_almond_muffins-s.jpg\" alt=\"Coffee, Coconut and Almond Muffins\" width=\"800\" height=\"530\" \/><p id=\"caption-attachment-11092\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>As someone who usually prefers a sweet breakfast, muffins are my &#8220;go-to&#8221; recipe whenever I need to make a quick-yet-delicious sweet breakfast to go.
