Pistachio short crust pastry, filled with pistachio ganache and pistachio mousse, all topped with green glaze and chopped pistachios.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">This is a unique tartelette that pistachio lovers will absolutely adore, as it&#8217;s a great, festive creation made only with pistachios.<\/p>\n<div id=\"attachment_11128\" style=\"width: 810px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-11128\" class=\"wp-image-11128\" title=\"Pistachio Tartelettes\" src=\"http:\/\/oogio.net\/wp-content\/uploads\/2015\/07\/infiniment_pistache_tarte-s.jpg\" alt=\"Pistachio Tartelettes\" width=\"800\" height=\"1200\" \/><p id=\"caption-attachment-11128\" class=\"wp-caption-text\">Photo: Natalie Levin<\/p><\/div>\n<p style=\"text-align: justify;\"><script async src=\"\/\/pagead2.googlesyndication.com\/pagead\/js\/adsbygoogle.js\"><\/script><br \/>\n<ins class=\"adsbygoogle\" style=\"display: block;\" data-ad-client=\"ca-pub-6091382327871787\" data-ad-slot=\"7832461759\" data-ad-format=\"auto\"><\/ins><br \/>\n<script>\n     (adsbygoogle = window.adsbygoogle || []).push({});\n<\/script><\/p>\n<p><!--WPRM Recipe 21203--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Pistachio Tartelettes<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<p><\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<h4>For salted pistachio crust:<\/h4>\n<ul>\n<li>175 grams all-purpose flour<\/li>\n<li>25 grams natural pistachios<\/li>\n<li>100 grams cold butter (cut into cubes)<\/li>\n<li>10 grams sugar powder<\/li>\n<li>1\/2 tsp. fine salt<\/li>\n<li>1 egg yolk<\/li>\n<li>1-2 tbsp. cold water (as needed)<\/li>\n<\/ul>\n<h4>For pistachio ganache:<\/h4>\n<ul>\n<li>200 grams white chocolate<\/li>\n<li>50 ml. heavy cream<\/li>\n<li>1 tsp. pistachio paste<\/li>\n<\/ul>\n<h4>For vanilla biscuit layer:<\/h4>\n<ul>\n<li>1 large egg<\/li>\n<li>40 grams sugar<\/li>\n<li>1\/4 tsp. vanilla extract<\/li>\n<li>Pinch of salt<\/li>\n<li>50 grams all-purpose flour<\/li>\n<\/ul>\n<h4>For pistachio syrup:<\/h4>\n<ul>\n<li>100 grams sugar<\/li>\n<li>125 ml. water<\/li>\n<li>1 tbsp. pistachio puree<\/li>\n<\/ul>\n<h4>For pistachio mousse:<\/h4>\n<ul>\n<li>4 grams gelatin powder<\/li>\n<li>20 ml. water<\/li>\n<li>150 ml. milk<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>40 grams pistachio paste<\/li>\n<li>3 large egg yolks<\/li>\n<li>30 grams sugar<\/li>\n<li>250 ml. heavy cream<\/li>\n<\/ul>\n<h4>For green glaze:<\/h4>\n<ul>\n<li>9 grams gelatin powder<\/li>\n<li>45 ml. water<\/li>\n<li>50 ml. water<\/li>\n<li>100 grams sugar<\/li>\n<li>100 grams glucose or corn syrup<\/li>\n<li>70 ml. milk<\/li>\n<li>100 grams white chocolate<\/li>\n<li>Green food coloring (to taste)<\/li>\n<\/ul>\n<h4>Decoration:<\/h4>\n<ul>\n<li>Roasted pistachios (very finely chopped)<\/li>\n<\/ul>\n<h4>You will need:<\/h4>\n<ul>\n<li>12 tartelettes baking rings 7 cm in diameter<\/li>\n<li>1 silicon mold of flat rounds about 6 cm in diameter<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Pistachio crust:<\/h4>\n<ol>\n<li>In a food processor with a steel blade put flour and pistachios and grind into a fine powder.<\/li>\n<li>Add butter, sugar powder and salt and blend until mixture is crumbly.<\/li>\n<li>Add egg yolk and continue to blend just until large clumps of dough form. If the dough is not setting, gradually add a little water.<\/li>\n<li>Transfer the dough chunks on a lightly floured work surface and form a disc-shape with your hands.<\/li>\n<li>Wrap in plastic wrap and refrigerate for about an hour.<\/li>\n<li>Roll out the dough on a floured work surface about 3-4 mm thick and cut out circles about 8-9 cm in diameter. Line the tartelette molds. It is important to create a right angle between the sides and the base of the crust, which will ensure the edges remain high when baking.<\/li>\n<li>Using a fork pierce the crust of each tartelette. Freeze the tartelette crusts for about 30 minutes before baking.<\/li>\n<li>Preheat oven to 170c degrees.<\/li>\n<\/ol>\n<h4>Blind baking:<\/h4>\n<ol>\n<li>Put a sheet of heat-resistant plastic wrap or baking paper over each tartelette and fill with dry beans or special weights for baking.<\/li>\n<li>Bake for about 10-12 minutes.<\/li>\n<li>Remove the weights and the plastic wrap and continue to bake the crust for about 8-10 minutes or until it is golden brown.<\/li>\n<li>Cool completely at room temperature.<\/li>\n<\/ol>\n<h4>Pistachio ganache:<\/h4>\n<ol>\n<li>Chop the white chocolate and put in a bowl.<\/li>\n<li>Add heavy cream and pistachio paste and solvents together in the microwave or over double-boiler until everything is melted and mixture is smooth.<\/li>\n<li>Cool the mixture at room temperature for about an hour until it begins to thicken and set somewhat.<\/li>\n<\/ol>\n<h4>Vanilla biscuit:<\/h4>\n<ol>\n<li>Preheat oven to 170c degrees.<\/li>\n<li>In a bowl of a mixer, whip egg, sugar, vanilla and salt at high speed until you get a stable, airy and bright mixture.<\/li>\n<li>Add in flour and fold gently until blended.<\/li>\n<li>Pour the mixture on an oven tray lined with lightly greased baking paper and flatten to an even layer, about 1-2 cm thick.<\/li>\n<li>Bake for 6-8 minutes or until golden.<\/li>\n<li>Cool completely and separate for the baking paper. Cut into small circles, about 4-5 cm in diameter.<\/li>\n<\/ol>\n<h4>Pistachio syrup:<\/h4>\n<ol>\n<li>In a small saucepan put sugar, water and pistachio paste and heat to a boil. Reduce the heat and cook for another 2-3 minutes after boiling.<\/li>\n<li>Cool completely before using.<\/li>\n<\/ol>\n<h4>Pistachio mousse:<\/h4>\n<ol>\n<li>in a small bowl mix gelatin and water and set aside for 10 minutes at room temperature until the gelatin absorbs all the liquid.<\/li>\n<li>In a medium saucepan put milk, vanilla and pistachio paste and heat to simmering point.<\/li>\n<li>Meanwhile, whisk egg yolks and sugar into a smooth mixture.<\/li>\n<li>Pour about 1\/3 of boiling milk mixture over the egg yolks while whisking . Then add in the remaining milk and mix well.<\/li>\n<li>Return the mixture into the pot and stir with a spatula while cooking on medium-low heat until the mixture thickens slightly and reaches a temperature of 82-84c degrees.<\/li>\n<li>Add the gelatin and stir until melted.<\/li>\n<li>Strain the mixture and cool slightly at room temperature.<\/li>\n<li>Whip cream to soft peaks and gently fold into the pistachio cream until smooth.<\/li>\n<li>Pour the mousse into the silicon mold, level the top and freeze for 4-5 hours at least, until completely frozen.<\/li>\n<\/ol>\n<h4>Green glaze:<\/h4>\n<ol>\n<li>In a medium bowl mix gelatin and 45 ml. of water and set aside for 15 minutes at room temperature until the gelatin absorbs all the liquid.<\/li>\n<li>In a medium saucepan put 50 ml. water, sugar and glucose and heat to a boil.<\/li>\n<li>When the mixture boils, add in the milk and mix well.<\/li>\n<li>Meanwhile, melt the white chocolate in the microwave or over double-boiler.<\/li>\n<li>When boiling again (after adding the milk), add in the gelatin and mix until melted.<\/li>\n<li>Strain and add into the melted chocolate. Wait a minute, and beat until melted and mixture is smooth.<\/li>\n<li>Add in food coloring until you reach the desired shade.<\/li>\n<li>Cool the glaze to 25-30c degrees.<\/li>\n<li>Extract the frozen passionfruit mousse from the mold and place on a rack.<\/li>\n<li>Pour the glaze, coating the sides and the top of each individual mousse.<\/li>\n<li>Freeze until assembly.<\/li>\n<\/ol>\n<h4>Assembly:<\/h4>\n<ol>\n<li>Drizzle pistachio ganache into the baked tartelettes.<\/li>\n<li>Place a circle of vanilla biscuit at the center and brush generously with pistachio syrup.
