Sandwich Heart Shaped Cookies Filled with Strawberry Jam

Although I usually don’t celebrate Valentine’s Day (I always say – why do we need a special day for love, that should be celebrated every single day?), sometimes it’s nice to be a little romantic and make heart shaped desserts and cookies. As a matter of fact, I made these cookies just because I wanted to use my heart shaped cookie cutter 🙂

These are nostalgic sandwich heart shaped jam cookies made of two butter almond cookies that are filled with red strawberry jam. As I wrote before, I made them heart shaped, but you can definitely make them in any other shape you’d like.

These sandwich heart shaped jam cookies are simply delicious, very easy to make and perfect for Valentine’s day (and for all year round, for that matter). They have a melt-in-your-mouth texture, and are so sweet and pretty.

Sandwich Heart Shaped Cookies Filled with Strawberry Jam

For the dough:

  • 100 grams (3/4 cup) all-purpose flour
  • 35 grams (1/3 cup) almond meal
  • 30 grams (3 tbsp.) cornstarch
  • 100 grams (1 stick) cold butter, cut into cubes
  • 40 grams (4 tbsp.) sugar powder
  • Pinch of salt
  • 1 tsp. vanilla extract
  • 1 egg yolk
  • 1-2 tbsp. cold water

For the filling:

  • 200 grams (about ½ jar) smooth strawberry jam

For serving:

  • Sugar powder
  1. Dough: in a food processor with a steel blade, put flour, almond meal, cornstarch, butter, powdered sugar, vanilla and salt and blend until a crumbly mixture is obtained.
  2. Add the yolk and continue to blend until large chunks of dough form. If the dough does not combine into large lumps – gradually add a little water.
  3. Transfer the dough to a lightly floured work surface, and form a disc shape with your hands.
  4. Wrap in plastic wrap and cool in the refrigerator for about an hour.
  5. On a floured surface, roll out the dough about 3-4 mm thick and cut out cookies of the desired shape. Make a small hole in ½ of the cookies using a small round cookie cutter.
  6. Place the cookies on a baking pan lined with baking paper.
  7. Preheat the oven to 170c degrees.
  8. Bake the cookies for 15-20 minutes or until golden brown.
  9. Cool completely at room temperature.
  10. Fill each pair of cookies with jam and close to a small sandwich.
  11. Decorate with powdered sugar and serve.
  • Keep the cookies in a closed container for up to a week.
  • You can fill the cookies with any spread you like or jam in other flavors.
  • Instead of almond meal you can use any other ground nut you like in the same amount.
