These chocolate fudge cookies are simply the best ever. They are super chocolate-y, melt in your mouth and so delicious and easy to make.

Perfect Chocolate Fudge Cookies
Adapted from Nigella Lawson recipe with some adjustments.
Ingredients:
- 125 grams melted dark chocolate
- 125 grams soft butter
- 75 grams light brown sugar
- 50 grams sugar
- 1 tsp. vanilla extract
- 1 cold egg
- 150 grams all-purpose flour
- 30 grams cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. fine salt
- 150 grams dark chocolate (coarsely chopped)
- Preheat oven to 170c degrees.
- In a bowl of an electric mixer with a paddle attachment put butter, light brown sugar and sugar and mix until the mixture is fluffy and airy.
- Add the melted chocolate and blend to a smooth mixture.
- Clean the sides of the bowl with a spatula, and then add vanilla extract and eggs. Blend until mixture is smooth.
- Sift in flour, cocoa powder, baking soda, salt and chopped chocolate and mix as short as possible, just until the dough is smooth.
- Using 2 spoons or a small ice cream scoop, make small dollops of cookies and place on an oven pan lined with baking paper. Gently flatten the top of each cookie.
- Bake for about 10-15 minutes or until the cookies are set on the edges but still slightly soft in the center.
- Cool completely and serve.
- Keep the cookies in a sealed container at room temperature for up to a week.
