I love summer fruits and whenever I have a few fruits in the kitchen that are too soft or a little “over their time”, I like adding it to pastries.
Galette is some-what freestyle French tart, that is so easy to make and absolutely gorgeous. If you server it warm with a scoop of vanilla ice cream it’s the perfect summer dessert!
Almond Plum Galette
For the crust:
- 250 grams (1 1/2 cups + 3 tbsp.) all-purpose flour
- 50 grams (1/2 cup) almond meal
- 100 grams (1/2 cup) sugar
- 200 grams (1 cup) cold butter cut into cubes
- 1 large egg
- 2 tbsp. Amaretto liqueur
- 1 tsp. vanilla extract
For the plums:
- 7-8 medium plums (sliced into thin segments)
- 80 grams (1/3 cup) sugar
- Juice of 1/2 lemon
- 4 tbsp. Amaretto liqueur
- 25 grams (2 tbsp.) light brown sugar
- 25 grams (1/4 cup) almond meal
For brushing:
- 1 large egg yolk
- 2 tbsp. milk
Decoration:
- Sliced blanched almonds
- Light brown sugar
- Crust: in a food processor with a steel blade put flour, almond meal, sugar and butter and blend until crumbly.
- Add in egg, amaretto and vanilla, and continue to blend just until dough begins to form.
- Flatten the dough into a disc shape, wrap with plastic wrap and cool for about 30 minutes in the refrigerator.
- Plums: place the sliced plums in a medium bowl.
- Add sugar, lemon juice and Amaretto and mix well until evenly covered.
- Assembly and baking: roll out the dough into a 3-4 mm thick circle, and cut out five 15-16 cm circles. Place the circles on an oven pan lined with baking paper.
- In a small bowl mix brown sugar and almond meal.
- At the center of each circle of dough sprinkle about 1-2 teaspoons of almond-sugar mixture.
- Arrange sliced plums, and fold the edges of the dough over the plums to create a Galette shape.
- Cool the galettes in the freezer for 10 minutes.
- Preheat oven to 165c degrees.
- In a small bowl mix egg yolk and milk and brush the edges of the galettes. Sprinkle with sliced almonds and a little brown sugar and bake for 22-27 minutes, or until golden brown.
- Sprinkle some powder sugar and serve warm, preferably with vanilla ice cream on the side.
- You can make the galettes with any other summer fruits you like such as nectarines, apricots, cherries and even grapes.
