Gluten Free Cheesecake with Fruits

This is the most airy, fluffy and melt-in-your-mouth cheesecake you’ll ever make! It’s simply divine and topped with colorful yummy seasonal fruit. This gluten free cheesecake is so easy to make and is perfect for Spring and Shavuot feast.

Gluten Free Cheesecake with Fruits

For the cake:

  • 4 large eggs (separated)
  • 200 grams (1 cup) sugar
  • 1 tsp. vanilla extract
  • Zest of 1/2 lemon
  • 40 grams (4 tbsp.) cornstarch
  • 500 grams ricotta cheese
  • 225 grams cream cheese (at room temperature)
  • 200 ml. (1 cup) sour cream

For the topping:

  • 200 ml. (1 cup) sour cream
  • 20 grams (2 tbsp.) sugar

Decoration:

  • Seasonal fruits to choice
  1. Preheat oven to 200c degrees and place a pan full of boiling water on the bottom. This creates a steamy baking environment.
  2. In an electric mixer bowl with a whisking hook, put egg whites and start whipping until white froth is made. Gradually add sugar and continue whipping until a stable meringue is formed.
  3. In a separate bowl, whisk egg yolks, vanilla, lemon zest, cornstarch, white cheese, cream cheese and sour cream until blended.
  4. Fold in the meringue gently until you get a smooth batter.
  5. Pour the batter into a greased pan and level off the top.
  6. Bake for about 15 minutes at 200c degrees. Then lower the oven temperature to 150c degrees and continue baking for 45-60 minutes or until the cake is set on the edges, but still slightly soft in the center.
  7. Topping: in a small bowl, mix sour cream and sugar until smooth mixture is formed.
  8. Remove the cake from the oven and pour the topping on it.
  9. Bake for about 10 minutes on 150c degrees.
  10. Turn off the oven and leave the cake inside to cool.
  11. Refrigerate the cake for about 4-5 hours, preferably overnight.
  12. Decoration: Arrange fresh fruit on top neatly serve.
  • You can use any fruit of love according to season and selection in greengrocers.
  • Keep the cheesecake in a closed container in the refrigerator for up to 3-4 days.
  • The fruit should be added before serving. It is recommended to make the cake at least one day before serving.
